In 2002, a couple of years before its opening, a particularly harsh winter killed 80% of the lavender plants, which were weakened by insufficient snow cover. The company had to replant 15,000 plants, a setback that underscored the importance of resilience and innovation. Today, a thick layer of straw is placed annually to shield the plants from Quebec's severe winters.
